Zucchini Bundt Cake

  • 3 eggs
  • 1 c oil
  • 3 tsp vanilla
  • 2 1/2 c sugar
  • 3 c flour
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 c grated zucchini
  • 1 c chopped nuts (optional)
Beat wet ingredients and sugar.
Sift dry ingredients and then add wet ingredients.
Bake for 60-70 minutes at 325 degrees.
(Can also be made into loaves).
